Sugar-Free Peach and Saffron Ice Cream – a 4-Ingredient Recipe

Sugar-Free Peach and Saffron Ice Cream – a 4-Ingredient Recipe

If you have only ever spread peach jam with saffron on bread – this recipe is an invitation to try it another way. Ice cream without an ice cream maker, with no added sugar. Just 4 ingredients and 10 minutes of prep.

The story behind this jam

The story of our peach jam with saffron began at the “Da Hvanesh Gorata” bazaar — with a lady named Nadia, from whom we buy our saffron. Yes, Bulgarian saffron.

Nadia saw our peach jam, stopped and told us that she makes peach with saffron at home. I got curious. The next day she came back — she had found one leftover jar of her homemade batch and brought it for us to try.

I couldn’t stop eating it. Such a pleasant, fresh and memorable taste — the kind that leaves its mark on your palate.

I knew we had to make it. But I had my doubts — at home it got mixed reviews, which I didn’t understand, because to me it was perfect. With saffron, it turns out, you either love it or hate it.

The jam came off the production line and went to the Interfood & Drink jury the very same day. The next day it won a gold medal.

It definitely deserves more than a slice of bread.

What makes peach jam with saffron different?

Saffron is one of the most precious spices in the world — it is harvested entirely by hand, and its taste is unlike any other. Earthy, slightly floral, with a warmth that peach can’t achieve on its own.

Our peach jam with saffron contains:

  • 99% fruit — pieces of fruit, not concentrate
  • 0 added sugar — sweetened only with a little stevia
  • Bulgarian saffron — from a small, internationally awarded producer, Nadia's Saffron
  • No preservatives, no colorings

That is exactly why it works so well in this recipe — it’s not just sweetness, but flavor and aroma.

Ingredients

  • 400 g thick yogurt/skyr — full-fat, for a creamier texture
  • 200 ml whipping cream
  • 3–4 tbsp peach jam with saffron — Dimmy's Farm + extra for serving
  • vanilla — optional

How to make it – step by step

Step 1: Whip the cream until stiff, with a mixer or by hand.

Step 2: Mix it with the yogurt/skyr and the vanilla — gently, with a spoon, without whisking. We want to keep the mixture as airy as possible.

Step 3: Transfer to an ice cream container or a loaf pan. Freeze for at least 4 hours, or overnight.

Step 4: Before serving — a spoonful of peach jam with saffron on top.

Ta-daaa, that’s it.

Tips for a better result

  • The yogurt should be cold — straight from the fridge, not at room temperature
  • Don’t overmix once you have combined the cream with the yogurt — mixing knocks the air out
  • For a more intense flavor — add the jam to the mixture before freezing too, not just on top
  • Take it out of the freezer 5-10 minutes before serving for easier scooping.

Why is it a good fit for people who avoid sugar?

Traditional ice cream contains 20-30 g of sugar per serving. This recipe uses:

  • Yogurt — a traditional taste, no added sugar
  • Cream — you can choose one without sugar
  • Jam sweetened only with stevia — a plant-based sweetener with a glycemic index of zero

The result is a dessert suitable for people who limit their sugar intake, are on a calorie-controlled diet, or simply avoid sugar without wanting to miss out on something delicious.

Frequently asked questions

Can I use fat-free yogurt?
You can, but the texture will be "icier" and less creamy. Full-fat yogurt gives the best result.

How long can it be kept frozen?
Up to 2 weeks in a well-sealed container.

Can I put the jam in the mixture, not just on top?
Yes — add it after mixing, swirling it in with a spoon in "ribbons" for a marbled effect.

Is this recipe suitable for children?
Absolutely. No sugar, no alcohol, no preservatives.

What is saffron, and is it safe?
Saffron is a spice obtained from the flower of Crocus sativus. It has been used in cooking for thousands of years. In small amounts — like those in the jam — it is completely safe.

Finally

Peach with saffron is a combination you either fall in love with from the first spoonful, or one that makes you come back for a second before you even know why. It rarely leaves anyone indifferent.
